Pumpkin Cookies

 This is an old Amish Recipe given to our family by an Amish Lady who worked for my father years ago. It’s a favorite!

 1 cup butter             1cup sugar           3/4 cup pumpkin

 1 egg                      2 cups flour          1 teas. soda

 1 teas. cinnamon      1/2 teas. salt

      Cream butter, sugar, and pumpkin together. Add egg.Add dry sifted ingredients. mix well. Drop by rounded teaspoon full on ungreased cookie sheet. Bake at 375 for 10-12 min. Ice with brown sugar icing:

                           Brown Sugar Icing

   In a saucepan bring to a boil 3 Tbls. butter, 4 teas. milk, and 1/2 cup brown sugar. Remove from heat. Cool. Stir in 1 cup powdered sugar and 3/4 teas. vanilla or maple flavoring. Ice cookies while still warm. YUM! YUM!
