Eggplant Baked in Cream
2 medium eggplants
2/3 cup melted butter
1 cup heavy cream
1 box instant stuffing mix
bread crumbs
Peel eggplant, slice and cook to mush in very little water. Drain and mix with melted butter, cream and stuffing mix. Place mixture in buttered casserole dish. Dot with butter and top with bread crumbs. Bake at 275 for 2 hours. The longer this bakes the better it is. Enjoy!
